Lighter + Healthier Bolognese

Bolognese is a staple in our household, though when you're trying to cut down on bad carbs, or just looking for a lighter version of pasta, spiralized zucchini are a godsend, spiralized in literally 5 minutes and another 5 minutes in the saucepan, my go-to quick dinner when the hubbie is craving bolognese.





 

Ingredients


300g minced beef
1 cup tomatoe polpa
1/2 an onion
1 teaspoon honey
2 garlic cloves, minced
1/2 tsp paprika
1/2 tsp basil
1/2 tsp sage
1/2 tsp oregano
1/4 tsp cumin
1/4 tsp cinnamon

4 large zucchinis, spiralized (place them in a large wide dish and place paper towels on top and on the bottom, to drain out access water)

Method

Cut the onions, and place them in a sauce pan with a tablespoon of olive oil or coconut oil, fry for 10 minutes until soft and slightly browned, add the teaspoon of honey and let caramelise. Remove from the saucepan. 
Place the minced beef in the saucepan, and cook until browned.
Add all the herbs, paprika and minced garlic, place the caramelised onions in with the herbed meat, and add the tomato polpa, season with salt and pepper.
Bring to a boil and let simmer for 5-10minutes.

In a separate saucepan, place a teaspoon of oil and add the spiralized zucchinis, I personally prefer them slightly browned, but its all about preference.

Mix the spiralized zucchinis with the sauce, and serve with some fresh basil 

Note: You can top with parmesan cheese, or a vegan option is nutritional yeast
